In honor of Cinco de Mayo I am making an asian stir fry for dinner...totally blew it on not planning a mexican food dinner. I am trying out a new Trader Joes sauce (for those of you who know me you know my cooking *revolves* around trader joes). My stir fry will only contain chicken, fresh pineapple, and shredded carrots as I am married to the pickiest person on the planet and no other ingredients would do! If this looks interesting to you I am more than willing to share my secrets...mix, cook and serve over rice. An 8 on the difficulty scale (ha, more like a 2 because there is chopping involved)!
